- Cholula or clean salsa

Instructions
- Heat a skillet over medium and dry-toss veggies until moisture reduces.
- Add onion and garlic; cook until softened.
- Add oil and let it sizzle.
- Crack eggs directly into the pan and fold into the veggies until set.
- Finish with cheese, herbs, or hot sauce.
