Big Breakfast Veggie Scramble

Ingredients

  • 2–3 cups mixed veggies (e.g., tomatoes, peppers, zucchini)
  • 1 onion, diced
  • Fresh garlic (optional)
  • 1 tsp olive oil, clarified butter, or avocado oil
  • 2–3 eggs
  • Optional:
  • Tillamook cheese
  • Cholula or clean salsa
  • Fresh herbs

Instructions

  • Heat a skillet over medium and dry-toss veggies until moisture reduces.
  • Add onion and garlic; cook until softened.
  • Add oil and let it sizzle.
  • Crack eggs directly into the pan and fold into the veggies until set.
  • Finish with cheese, herbs, or hot sauce.
